I have only had to deal with Palm OS(tm) devices. I use ScreenShot Hack, 
$15 from http://linkesoft.com/screenshot/

It lets me run the application on the PDA and take screen shots with a 
(configurable) pen stroke. The saved images are automatically downloaded 
to a dedicated folder on my PC each time I do a HotSync(tm).

Emulation on a PC is not an option for me, because the application on 
the PDA communicates with our hardware product over the IR port; the 
only way to get realistic screens is to be working with an active 
instrument and PDA.
