Rick is absolutely correct (he invariably is about these things) that you can use variables inside those postscript code text frames. I second his recommendation that you go that route. Makes updating far simpler. If you go that direction, though, just remember that importing variables from another document may get trickier. If the variable is defined in both docs, the value in the document you import from wins out. --mike

Mike and Rick, thank you both for your responses. I just spoke with Rick to step through the process and successfully got this to work in my document. Rick mentioned that I may be able to use variables in the code. I will try that as well.

You can do this with a "Postscript Code" text frame containing a pdfmark operator. A "Postscript Code" text frame is just a regular text frame that has the "Postscript Code" property set from the Object Properties dialog. When that checkbox is selected, any text in the frame is treated as if it were postscript code. Here is sample code that should get you started:
 
/pdfmark where {pop} {userdict /pdfmark /cleartomark load put} ifelse
[ /Custom_Acrobat_Property_Name (This is the value of the custom property.)
/DOCINFO pdfmark
